Miso Scrambled Eggs

It can be especially hard this time of year to stay on track health-wise. Between traveling, seeing family, and multiple boozy holiday parties, our bodies can feel pretty rundown. One of the easiest ways to get a little balance is to start the day with a healthy breakfast. A good breakfast to us is fast (like, under ten minutes fast), and protein-rich to give us some much needed energy. 

Right now we are loving miso scrambled eggs topped off with green onion. The miso, with its packed umami flavor, is a great swap out for cheese, and the green onion adds a bit of bite to the miso's salty sweetness.

In addition to being addictively tasty (think cheese wiz, minus the chemicals), miso is also a probiotic. Made by fermenting soybeans, miso aids your digestion and helps boost your immune system.

  • 2 eggs
  • 1/2 tablespoon of white miso paste
  • one green onion, sliced (separate the green and the whites) 
  • a splash of oil

Scramble eggs in a bowl. Heat a pan on very low, and pour a bit of oil in. Once the oil has spread, add eggs and white parts of the green onion. Stir continuously until your preferred consistency. Add in miso and stir until incorporated. Top with remaining green onion.
