This past summer, a cute new restaurant popped up on the corner of MacDougal and Bleecker Street in Manhattan's West Village. The small corner shop with black and white striped awnings seems to be quite ordinary, with a menu of burgers, meatball sandwiches, and cookies and ice cream. But upon closer inspection one can see that there's something special about this place. The burgers are made of tempeh, lentils, chia seeds, and walnuts. The meatball sub is made from portobello mushrooms and is topped with cashew mozzarella. This place is anything but ordinary- this burger spot is vegan!

An Animal Product-Free Shake Shack

The plant-based fast casual burger joint, known as By Chloe, may be a first for New York. There's been plenty of vegan restaurants to pop up throughout the years but none have filled the contemporary need for quick and tasty food. The best way to describe it might be as an animal product free Shake Shack, if you will. This isn't to say that Shake Shack aficionados are going to be converted by the meatless options at By Chloe- we would hands down go for the vegetarian 'Shroom Burger from Shake Shack over the vegan Classic Burger from By Chloe, but for the hardcore vegan, this is a good as it gets.

Impressive Stock

By Chloe has an impressive founder behind its vegan vision,   chef Chloe Coscarelli. The 28 year old is the first vegan chef to win in a culinary competition on national television. She took home the prize as victor of Food Network's Cupcake Wars in 2010. She is also responsible for publishing arange of vegan cookbooks including Chloe’s Kitchen, Chloe’s Vegan Desserts, and Chloe’s Vegan Italian Kitchen.

More To Come

Coscarelli, along with ESquared Hospitality's creative director, Samantha Wasser, have big plans for the now single location eatery. "If we could create a concept where delicious vegan food was made fresh, fast, and affordable, then vegan food would be accessible to the masses." With two more locations already in the works and slated to open in the first quarter of this year, it seems Coscarelli and her team's vision is coming to fruition quicker than than one could have ever wished for. Look out Shake Shack, there might just be some unexpected competition coming you way.
