A Healthier Piña Colada For The Cool Kids

There's nothing better than lying back at the beach with the sun on your skin, saltwater in your hair, and a Piña Colada in hand. If you’re one of those weirdos who doesn’t like coconuts or rum, then just ignore this. But for the rest of us, this is as good as it gets. The only downside is that a Piña Colada, while delicious, isn’t exactly ideal for maintaining a beach body. 

Wouldn’t it be awesome if there was a slightly healthier version of the Piña Colada, one that you could drink all summer long? A version that was just a little less maraschino-cherry cheesy? Well, guess what? There is!

I’m a huge fan of using coconut water frozen into ice cubes to melt into a good quality rum. You can use fresh juice from a young coconut, but the cold pressed kind, like from Harmless Harvest, works just as well and saves some time. Add some fresh pineapple juice and a dash of coconut milk, and you have a modern twist on a Piña Colada, my friends. This is the kind of drink I wouldn’t be ashamed to order in the hippest of Brooklyn Bars. But I'd rather be drinking it at the beach.

INGREDIENTS

  • 3 coconut water ice cubes
  • 1.5 ounces rum
  • 3 ounces pineapple juice
  • 2 ounces coconut milk
  • Sliver of pineapple for garnish

DIRECTIONS

Freeze the coconut water in an ice cube tray.

Open can of coconut milk and whisk until fully incorporated. (If it doesn't reach a smooth consistency, you can heat it for second on the stove top until it fully incorporates. Just let it get back to room temperature before making your drink.)

Place three coconut water ice cubes in a glass. Add rum, coconut milk, and pineapple juice and stir gently. Garnish glass with sliver of pineapple.
